DRY AGING MASTERS

EPISODE 6 - HEATHER THOMASON: HONEST MEAT

EPISODE 6 - HEATHER THOMASON: HONEST MEAT

Back in 2014 Heather Thomason recognized a need to restore the relationship between consumer and farmer, emphasizing the supply chain by paying close attention to local, sustainable and ethically raised animals. She left her successful career in graphic design and decided to learn the craft of butchery, from learning to raise pastured animals from birth to slaughter on the farm of Pennsylvania to breaking down and preparing whole animals for retail in Berkeley, CA.

Today, Heather owns and operates two locations of her butcher and retail shop, Primal Supply Meats, in the Philadelphia area as Master Butcher In Charge. She works closely with the local farmers so together they can use genetics and pasture, seeds and diet to produce the highest quality meat in the region. Primal Supply’s products are highly sought after not only by the local community but also by the finest chefs and restaurants from the region.

In her whole animal butcher shop, Heather and her team strive to educate the customer, to help build more awareness and demand for local meat from the neighboring area, and to produce a consistent, highest-quality product, which is especially highlighted in her dry age program.

In Episode 6 of the DRY AGING Masters Series, we visit "Primal Supply Meats" – a modern butchery focused on supporting local farmers.
